In his book Own the Day, Own Your Life, Aubrey Marcus posits that to have true life change you must master a single individual unit of your life: one day.  Marcus recommends optimizing practices for waking, working, learning, eating, training, playing, sleeping and sex.

One of those practices is to eat a weird lunch.  Marcus maintains that lunch is an opportunity to reframe and restart your day.  Lunch also serves as an opportunity to get your body the micronutrients it needs to keep you feeling great throughout the rest of your day.  That way to keep you feeling great is by experimenting, exploring and keeping it weird.  Below is a lunch recipe by Marcus.

Chipotle Beef Bowl

Serves 1

Time to Prep: 5 minutes

Time to cook: 15 minutes

Ingredients:

  • 1 Tablespoon avocado oil
  • 1 cup seasonal organic peppers, sliced
  • 1 small organic yellow onion
  • 1 teaspoon chipotle seasoning blend
  • 6 ounces Root + Holler ground beef
  • Sea Salt
  • Black Pepper
  • 1/2 cup organic broccoli sprouts
  • 1/4 cup fresh organic cilantro, chopped
  • 2 tablespoons whole-milk Greek yogurt
  • 1/4 cup pico de gallo

Directions:

  1. Heat the avocado oil in a medium skillet over medium-high heat.  Add the peppers and onion, and sauté for about 5 minutes, stirring occasionally, until they start to get soft.
  2. Add the chipotle seasoning blend and beef.  Lower the heat to medium and cook, stirring often, until the beef is no longer pink (7-10 minutes).
  3. Season to taste with salt and pepper
  4. Serve over the broccoli sprouts, and top with the cilantro, yogurt, and pico.
